Enjoying a string of sunny warm days here - not too hot and just right for walking, biking, and barbecues! I am off from work and having fun trying to make new things. like potato and pea oven-baked samosas.
And I did bake my first sourdough loaf, which was pretty good!
Barbecue Ideas
Here are some plant-based ideas for Memorial Day and cook-outs
Orange Tahini Grilled Tofu
Grilling vegetables is really simple. I recommend using a grilling basket. Just cut up the veggies, toss them into a bowl, and marinate them in some balsamic vinegar or fresh lemon or lime juice, olive oil, spices, salt, and pepper (or your favorite vinaigrette salad dressing) while you’re starting the barbecue.
I made them on kabobs for years, and that is good too, plus they have a nice presentation. But it is a little more fussy….and sometimes a veggie gets lost in the grate!
I spray the grilling basket with nonstick spray, then put it on the grill, add the veggies, and stir and check every few minutes so nothing is burning. Depending on the flame, it can take 5 - 15 minutes for the veggies to cook (we use charcoal).
Then I like making veggie bean burgers to serve on whole wheat buns with lettuce and tomato, and of course, some tortilla chips!

Since most children don't eat enough vegetables. why not introduce them at breakfast? Preschool children in England were offered carrots or celery at breakfast,“Veggie Brek”, and 62.4% ate some - certainly a promising idea!
