Greetings, everyone! At last we are enjoying a bit more warm weather and less winds here in Pennsylvania. My indoor hydroponic herbs are still doing well with great fresh lettuce and kale for salads, and I have just started Thai basil. As we look ahead for Mother’s Day, here are 25 ideas I have put together for healthy vegan menu options.
And here is my latest recipe: cookies for a change!
I have combined a couple of my favorite flavors again: chocolate and peanut butter. Check out these homemade vegan oatmeal date cookies (they are also gluten-free) for a healthy sweet treat! Includes almond flour, peanut butter, and chocolate chips.
Nutrition News
If you follow a plant-based diet, you may wonder about good sources of omega-3 fatty acids - the essential fatty acids we often associate with fatty fish, like salmon. A new study published in Advances in Nutrition reviewed existing research studies and meta-analyses. It looks like α-linolenic acid from plant sources like flaxseed oil, canola oil, and walnuts is associated with a lower risk of cardiovascular disease. More research is needed on this and the relationship with other health conditions.
