Greetings everyone,
This morning my thoughts are turning to Passover, which begins on the evening of April 15th this year. It’s an important celebration of freedom in the Jewish religion, and to remember the flat bread Jews made while quickly fleeing Egypt, we eat matzo for the 8 day holiday. Leavened bread and other wheat products aren’t eaten. This always poses a challenge to me, as I do love bagels, pasta, and crackers on a regular basis. Earth Day
In April we also have Earth Day, celebrated first on April 22, 1970. An important way to help conserve water and decrease greenhouse gasses is to eat a plant-based diet. Finds lots of data, quizzes, and take action ideas at earthday.org.

What is Nice Cream?
Warmer weather calls for lighter desserts. Something I have discovered is nice cream: super easy to make by combining and freezing fruit. This is a much healthier version of ice cream since there is no cream, milk, eggs, and little to no added sugar. Plus, you don’t need an ice cream maker.
Bananas and pineapples provide a creamy texture, but the finished dessert can take on other flavors too. One of my favorites is Chocolate Mocha Nice Cream.
How do Plant-Based Foods Help Our Skin?
This review article in the Journal of the Academy of Nutrition and Dietetics looks at articles about the effect of whole fruit and vegetables. The antioxidant compounds in these do seem beneficial from epidemiological studies, but more research is needed.
