July 2023 Plant-Based Recipes and Updates from Melissa
New recipes, Travel Nutrition Tips, Grocery Outlet Finds, Book Recommendation, and Plant-Based Diet Updates
Hope your summer is off to a good start. Have you tried “Honeylicious” nectarines? My honey got them for us: a juicy and sweet taste of summer. I think my hydroponic oregano successfully made the transition to being an outside plant (always tricky for me). And I am enjoying the blueberry honey that my daughter brought me from Maine!
Are you in a breakfast rut? I have been into bean, cactus, and veggie tostadas with pice de gallo and guacamole. Some excellent breakfast choices in Mexico: plus of course a bunch of tropical fruits like mangoes, papaya, passion fruit, and rambutan. And my favorite Mexican treat: bunuelos.
New and Updated Recipes and Articles
What type of tofu do you usually use? My default is extra firm tofu for stir-fries. but silken tofu has a lot of different uses. Try this recipe for a fresh, savory take on breakfast, with a bit of spice from jalapenos if you want.
Looking for a low-calorie, refreshing drink? This blueberry lavender iced tea mocktail is light and flavorful - plus super easy to make!

My Indian Table: Quick & Tasty Indian Vegetarian Recipes by Vandana Sheth RDN, CDE, FAND
I had the pleasure of meeting Vandana in person at a conference last year, and love how this book makes favorite Indian foods accessible for beginners. She provides advice for making basics like rice, lentils, and spice mixes. Try chana masala, palak tofu, or potato masala for some tasty vegan basics. And I love the focus on her family connections!
