Yogurt Parfait, Pasta Salad, Homemade Sorbet, Too Good to Go
Heat wave #1 down! I have to say, Iβm not loving summer so far. Maybe I need to acclimate to it. I try to walk early - but then with sunrise about 5:30 am, itβs hard to get up and out quite that early! So here are some cool recipes to try and tips for vacation spots!
New Recipe
Yogurt Berry Granola Parfaits (Dairy-Free)
These yogurt berry granola parfaits make a simple, refreshing breakfast or snack. They are layered with a homemade granola with mixed nuts, dried fruit, and blueberries and strawberries. Inspired from my cruises!
The only added sugar is a little maple syrup in the granola if you choose unsweetened yogurt. Each parfait has about 8 grams of protein and 5 grams of fiber when made with soy yogurt.

Kiwi Pineapple Sorbet (only 4 ingredients!) - use extra fruit to make this easy sorbet - without needing an ice cream machine (i blended it in a food processor).

Too Good To Go
Have you heard of Too Good to Go? This is an app that helps businesses with leftover food connect with consumers. The prevent food waste and help people save money. You order a surprise bag ahead of time, and then pick it up at the specified time.
Before, I had only tried it for bagel shops. One even let me choose whatever I wanted from the case for $3.99 for 19 bagels!
But now that we have a Whole Foods nearby, I saw they have bakery bags and prepared food bags. We tried a bakery bag and got this for $6.99: a half dozen everything bagels, a box of vegan chocolate chips cookies, and a box of chocolate chips scones. They were dated sell by the previous date, seemed perfectly fresh, and would have cost about $22.

We tried electric rail biking in the Pocono mountains on an afternoon that wasnβt too hot. You could pedal when you want and put down the gas pedal when you need a breakβ¦.and zip through the beautiful scenery. We saw a bald eagle and apparently sometimes people see a bear - glad we didnβt!
