I was excited to return to a favorite local Farmer’s Market last week, where I found this wonderful Tuscan kale, a great bag of spring mix, and some lovely poppies.
I usually head there after breakfast - which is a mistake because they have coffee and fresh bagels with unusual flavors.
So far I have used the kale in salad, kale-artichoke dip and pizza, and stir-fries. I love the dark green color, and it seems more tender than regular kale.
Nutritionally, kale is a great source of Vitamin A, Vitamin K, folate, iron and more nutrient (read more: Kale: Discover the 'secret powers' of this superfood from the Mayo Clinic). Unlike spinach, kale is low in oxalate, so the calcium is absorbed better.
