Welcoming all things spring, here is my latest blog post with 15 vegan potato side dishes to try, including potato soup, potato salad, air-fryer recipes, oven-roasted potatoes, and scalloped potatoes.

Of course, what is seasonal depends on where you live! I have been growing Genovese basil, lime basil, thyme, and mint through the winter in an indoor hydroponic garden. And finally, on my 4th? try, oregano is growing successfully!
I just pulled out a few herbs past their prime and am switching them to salad greens to be able to grow some of our salads at home. Have you started growing any spring vegetables?
It’s also fun to regrow vegetables with scraps - my favorites are green onions, romaine lettuce, and celery. You can cut down on food waste, food miles, and your food cost too!
March is National Nutrition Month, so it’s the perfect time to try new foods and enjoy the flavors of good health. And maybe some chocolate-covered strawberries too!
