Fresh Picks & Tasty Bites for a Plant-Based Spring
With spring just days away, nothing gets me in the mood for warmer weather like harvesting a winter indoor garden! Growing jalapeños has been a blast!
Fun to pick and chop up for pico do gallo, burritos, and more. I love to pick my fresh romaine, kale, and chives for salads.
Then I use the fresh basil and oregano to top my pizzas and pasta!

Growing your own vegetables and herbs can be a fun hobby, and a great way for kids to learn more about where our food comes from, too.
I have much less experience growing fruits. I helped with strawberries and hardy kiwis at a local community center, but would love to live someplace warmer and have citrus trees!

Emerging EAT-Lancet planetary health diet is associated with major cardiovascular diseases and all-cause mortality: A global systematic review and meta-analysis (2024)
Are you familiar with the EAT-Lancet Diet? This is a plant-based diet designed to improve both health and sustainability. This study was a meta-analysis that combined 28 studies with over 2 million participants.
The researchers found that “the EAT-Lancet diet was significantly associated with reduced odds of diabetes, CVD, cancer and mortality.”
