Air Fryers, Black Bean Salad, Triple Berry Nectarine Berry Crisp, Plant-Based Diets and Muscle Growth
Do you have an air fryer? We just got one and I’m having fun experimenting with it. So far, crispy tofu cubes, vegan French toast, and garlic bread have been my favorites. Sweet potatoes fries were a little underwhelming so I’ll need to learn a better method for those. And, I’m looking forward to trying Brussels sprouts, cauliflower, and stuffed mini-peppers.

Black Bean Salad with Corn and Edamame
This black bean salad with corn and edamame is quick to make, full of flavor, and works well as a side dish or topping. Try it with tortilla chips, over rice, or in tacos and burritos. It’s colorful, plant-based, and packed with fiber and protein—about 8 grams of protein and 6 grams of fiber per half-cup.
