November 2023 Plant-Based Recipes and Updates from Melissa
Vegan Chili, Vegan Thanksgiving Recipes, Make Ahead for Thanksgiving, Leftover Cranberries, Book Pick, The Appelist, and More!
Ahh, the beginning of November: a lasting chill in the air, leaves everywhere, and an extra hour to spend - doing what? If it’s cooking or eating, you’re in the right place!
I have forsaken my sourdough bread baking, but am on an oatmeal kick: oatmeal cookies with chocolate chips and raisins feel just right for this time of year as a healthy dessert or afternoon snack with cinnamon apple tea.
Pumpkin spice coffee with warm whipped oat milk is another favorite, and I’m about to make some Belgian waffles.
Updated Seasonal Recipes
Slow cooker vegan chili is an easy, satisfying meal. I have just updated this to make it more flavorful with aromatics and fire-roasted tomatoes. Simple to make by chopping up some veggies, using canned beans or your own cooked ones, and letting the slow cooker transform your ingredients into a nourishing bowl of comfort!
